Abkhazian Trout with Cilantro Sauce Recipe

Serves/Makes: 2 servings

Ingredients:

  • 2 brown trout, about 3/4 pound each
  • 1 tablespoon lemon
  • Olive oil
  • Sea salt and ground black pepper to taste
  • 1 pinch ground coriander
  • 1 small bunch cilantro, finely chopped
  • 3-4 sprigs fresh tarragon, finely chopped
  • 1 white small onion, finely chopped
  • 1 red hot chili peppers
  • For Cilantro Sauce:

  • 1 large bunch cilantro
  • 2-3 green onions
  • 2-3 cloves garlic
  • 1 red hot chili peppers
  • 1/2 inch ginger root
  • 3 tablespoons white balsamic vinegar (can be lemon juice)
  • 1 teaspoon sugar
  • 1 teaspoon sea salt
  • 3 tablespoons olive oil
How to cook Abkhazian Trout with Cilantro Sauce:
  • Carefully clean the fish, remove the entrails and gills. Rinse the fish under running cold water and pat dry with paper towels. Drizzle with lemon juice.
  • With a brush oiled the fish, season with salt, pepper and ground coriander. Sprinkle with chili pepper flakes.
  • Place cilantro, tarragon and onion in abdominal cavity of each fish. Let marinate for 30 minutes.
  • Cover a baking sheet with foil, greased with olive oil. Lay the fish.
  • Bake in a preheated oven to 400°F (200°C) for about 20 minutes.
  • For cilantro sauce: in a food processor or blender, combine bunch of cilantro, green onions, garlic, hot chili peppers, peeled ginger, salt, sugar, vinegar (or lemon juice) and olive oil; blend until smooth. (If you like cilantro you can use this delicious sauce for fish, poultry and meat.)
  • Serve the Abkhazian Baked Trout hot with Cilantro Sauce.
