Angels On Horseback (Oysters en Brochette) Recipe

Serves/Makes: 3 servings


  • 12 medium-size raw oysters, shucked and drained
  • 6 slices lean bacon, cut in half
  • 1 clove garlic, chopped
  • 3 tablespoons lemon juice
  • 1 pinch cayenne
  • 1 teaspoon chopped parsley
  • Kosher salt and black pepper
  • 12 buttered toast rounds (optional)
  • Parsley or watercress to garnish (optional)
  • 12 Toothpicks soaking in water
How to cook Angels On Horseback (Oysters en Brochette):
  • Cut the bacon in half and cook in a microwave oven for approximately 1 minute or pan fry until the edges begin to curl but the bacon is still flexible. Drain well.
  • In the meantime, marinate the oysters in the garlic, lemon juice, cayenne, and parsley 10-15 minutes should do the trick.
  • Remove oysters from marinade, roll bacon around each oyster and secure with toothpicks.
  • Season with a little kosher salt and a lot of freshly ground black pepper (or to taste).
  • Place the bacon-wrapped oysters under a broiler for 8-10 minutes, or until bacon is crisp.
  • Then turn over to crisp the underside for 4-5 minutes, or until the bacon is crisp and the edges of the Oysters are curled.
  • Serve the Angels On Horseback at once as appetizers with toast points or garnish with parsley or watercress.
