Asian Seafood Satay-Satay Recipe

Serves/Makes: 4


  • 1 pound shelled shrimp or scallops, or a combination
  • Sesame seeds and chopped coriander, to garnish
  • Coconut-Peanut Sauce:

  • 1/4 cup light coconut milk
  • 2 tablespoons natural peanut butter
  • 2 teaspoons soy sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons rice wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds
  • 1 teaspoon minced garlic
  • 1/2 teaspoon minced fresh ginger
  • 1/8 teaspoon hot Asian chili sauce
How to cook Asian Seafood Satay-Satay:
  • Preheat grill or grill pan. Spray with vegetable spray.
  • Thread shrimp on 8 short or 4 long skewers. (If using wooden skewers, soak in water for 20 minutes before using.)
  • TO MAKE SAUCE - In a blender or small food processor, combine coconut milk, peanut butter, soy sauce, sesame oil, rice wine vinegar, honey, sesame seeds, garlic, ginger, and hot Asian chili sauce; puree. Divide in half.
  • Brush skewers with half of sauce. Grill over medium-high heat for 5 minutes, turning once, or until seafood is just cooked through.
  • Serve the Seafood Satay–Satay with remaining sauce on the side. To garnish, sprinkle with additional sesame seeds and coriander.
