How to cook Bacon Wrapped Scallop Fondue
- 12 ounces scallops
- 1pound sliced bacon, each slice cut into thirds
- Oil for fondue
- Wrap a scallop with a piece of bacon; secure with a toothpick and place on platter. Continue until all scallops are wrapped in bacon.
- In a saucepan heat oil to 375°F (190°C) and transfer to fondue pot (or heat oil in an electric fondue). Do not fill fondue pot more than half full. Before using, allow oil to cool slightly to 350°F (180°C).
- Spear bacon-wrapped scallop with fondue fork and remove toothpicks. Fondue in moderately hot oil for 3 to 5 minutes or until bacon starts to brown.
