Baked Salmon with Sauteed Red Potatoes Recipe

Serves/Makes: 4

Ingredients:

  • 1 salmon fillet (about 1 pound)
  • 1 tablespoon butter, melted
  • 1 tablespoon prepared horseradish, drained
  • 2 teaspoons lemon juice
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • Sauteed Red Potatoes, to serve (see the recipe below)
How to cook Baked Salmon with Sauteed Red Potatoes:
  • Place salmon fillet skin side down in an 11x7-inch baking dish coated with cooking spray.
  • In a small bowl, combine the butter, horseradish, lemon juice, garlic powder and pepper; spread over salmon.
  • Bake, uncovered, at 375°F (190°C) for 20-25 minutes or until fish flakes easily with a fork.
  • Serve the Baked Salmon with Sauteed Red Potatoes.

Sauteed Red Potatoes Recipe

Sauteed Red Potatoes Ingredients:
  • 4 medium red potatoes, cut into 1/2-inch cubes
  • 1 medium onion, thinly sliced
  • 1 jalapeno pepper (or to taste), seeded and chopped
  • 1/4 teaspoon salt-free seasoning blend
  • 1/4 teaspoon pepper
  • 1 tablespoon canola oil
  • 2 small tomatoes, chopped
How to cook Sauteed Red Potatoes:
  • In a large nonstick skillet coated with cooking spray.
  • Saute the potatoes, onion, jalapenos, seasoning blend and pepper in oil for 30-35 minutes or until potatoes are tender.
  • Stir in tomatoes; heat through.
