Baked Scallops and Mushrooms in Cream Sauce Recipe

Serves/Makes: 8 servings


  • 2 pounds scallops
  • Salt and pepper
  • 1/2 pound mushrooms
  • 2 ounces butter
  • 2 cups Parsley-Cream Sauce (see the recipe below)
  • 1/2 cup grated Swiss or American cheese
How to cook Baked Scallops and Mushrooms in Cream Sauce:
  • Preheat oven to 400°F (200°C).
  • Butter a 2-quart glass casserole. Place a layer of scallops in the bottom of the dish. Sprinkle with salt and pepper to taste, cover with a layer of sliced mushrooms that have been lightly sauteed in 2 ounces of butter.
  • Cover with 1 cup of Parsley-Cream Sauce. Top with a second layer of scallops, a second layer of mushrooms, and a second cup of Parsley-Cream Sauce.
  • Sprinkle 1/2 cup grated cheese of choice evenly on top of the casserole and place in a 400°F (200°C) oven for about 20 minutes.

Parsley-Cream Sauce Recipe

Parsley-Cream Sauce Ingredients:
  • 2 ounces butter
  • 1/2 cup flour
  • 1 cup cream
  • 1 cup milk
  • Salt and pepper, to taste
  • 1/4 cup chopped parsley
How to cook Parsley-Cream Sauce:
  • Melt butter in a saucepan. Remove from heat and stir in flour, stirring to remove any lumps.
  • Gradually add cream, a little at a time, stirring until smooth and creamy. Add milk and continue to stir until smooth again. Season with salt and pepper to taste.
  • Fold in chopped parsley.
