Bangus Fritters with Creamy Garlic Mayo Recipe

Serves/Makes: 3 - 4 servings

Ingredients:

  • 1 whole bangus (milkfish), about 1 1/2 to 1 3/4 pounds
  • 1 tablespoon finely minced garlic
  • 2 onions, finely chopped
  • 2 skinless sweet pimiento (canned), finely chopped
  • 1 teaspoon finely chopped parsley
  • 3 slices bread
  • 1/8 cup milk
  • 1 egg, beaten
  • Salt and pepper to taste
  • 1/2 cup cooking oil
  •  For Creamy Garlic Mayo:
  • 1/2 teaspoon finely minced garlic
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1/4 teaspoon finely chopped parsley
  • Salt and pepper to taste
How to cook Bangus Fritters with Creamy Garlic Mayo:
  • Steam or broil bangus.
  • Meanwhile prepare mayo by mixing all Creamy Garlic Mayo ingredients together.
  • Cool the fish. Pick the bones. Flake the meat.
  • Tear bread slices into very small pieces or grate in the blender.
  • Pour milk over bread and mash. Mix all of the ingredients together.
  • Form into small fritters, about 3-inch in length and 1- inch in diameter.
  • In deep fryer or in a high-side saucepan on medium-high heat bring the oil up to a temperature of 350°F to 375°F (180°C to 190°C). Check your temperature with a candy thermometer or until a small cube of white bread dropped into the oil turns golden brown in 15 seconds.
  • Deep-fry fish fritters in batches. Make sure that there is enough room in the skillet to roll them while cooking.
  • Cook the fish fritters until golden brown. Drain on paper towels and serve with Creamy Garlic Mayo on a side.
