Blackened Salmon with Yellow Rice and Broccoli Recipe

Serves/Makes: 2 servings

Ingredients:

  • 2 salmon fillets (about 5 ounces each)
  • 1 tablespoon paprika
  • 1/2 tablespoon creole seasoning
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon black pepper
  • Extra virgin olive oil
  • Butter
  • 1 head broccoli, trimmed and broken into florets
  • Yellow Rice (see the recipe below) to serve
  • Gorgonzola cream sauce (see the recipe below) to serve
How to cook Blackened Salmon with Yellow Rice and Broccoli:
  • Rinse salmon fillets, pat dry.
  • Pour olive oil over salmon on both sides.
  • Mix seasoning blend and heavily coat salmon with spices.
  • Add about 2 tablespoons of olive oil to pan over medium heat.
  • Place salmon in pan skin side up, cook for about 2 minutes.
  • Flip salmon over and cook for about 5 minutes more or until salmon flakes easily with a fork.
  • Boiled the broccoli for about 5 minutes in water (I used chicken broth) and drained.
  • Serve the Blackened Salmon on a bed of the yellow rice and the broccoli topped with the Gorgonzola cream sauce.

Yellow Rice Recipe

Yellow Rice Ingredients:
  • 4 1/2 cups chicken broth
  • 3 cups basmati or jasmine rice
  • 1 stick unsalted butter
  • 1 teaspoon turmeric powder
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
How to cook Yellow Rice:
  • Add butter, broth, and spices to a stock pot.
  • Bring mixture to boil, stir in rice, reduce heat to low, cover and simmer for 15 minutes.
  • Remove rice from heat and allow to steam for 10 minutes before serving.

Gorgonzola Cream Sauce Recipe

Gorgonzola Cream Sauce Ingredients:
  • 3 ounces Gorgonzola cheese
  • 1/2 cup sharp cheddar
  • 1/2 cup jack cheese
  • 1 1/2 cups heavy cream
  • 1 teaspoon black pepper
  • 1/2 teaspoon creole seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon butter
  • 1 tablespoon flour
How to cook Gorgonzola Cream Sauce:
  • In a medium stock pot melt butter over medium heat, add flour and whisk well for about 1 minute.
  • Add heavy cream and bring to a boil, boil for about 2 minutes.
  • Add cheese and seasonings and whisk well.
  • Reduce heat to low and simmer for about 5 minutes, whisking occasionally.
  • Remove from heat, sauce will thicken as it cools.
