Canned Salmon Pie Recipe
Serves/Makes: 6
Ingredients:
- 1 (7 3/4-ounce) can salmon, drained and flaked
- 1 tablespoon flour
- 1 1/2 cups shredded Swiss cheese
- 4 eggs, beaten
- 1 can evaporated milk
- 2 tablespoons chopped green onions
- 1 tablespoon grated Parmesan cheese
- 1 unbaked pie shell (can be frozen)
- Preheat oven to 375°F.
- Use deep 10-inch unbaked pie shell. (Use very deep pie shell to prevent leakage in oven.)
- Toss salmon with flour and spread onto bottom of pie shell.
- Cover with Swiss cheese.
- Combine eggs, milk and onions. Pour into pie shell.
- Sprinkle with Parmesan cheese.
- Bake 30 - 35 minutes or until knife ed halfway between center and edge comes out clean.
- Let stand 5 minutes before serving.
