Clams wih Parmesan Cheese Recipe

Serves/Makes: 4

Ingredients:

  • 48 small clams
  • 1 tablespoon (15 mL) butter
  • Juice of 1/2 a lemon
  • 1 tablespoon (15 mL) butter
  • 1 tablespoon (15 mL) freshly chopped parsley
  • 1 tablespoon (15 mL) chopped chives
  • 2 garlic cloves, crushed and minced
  • 1 onion, finely chopped
  • 1 celery stalk, finely chopped
  • 3 tomatoes, chopped
  • 1/2 cup (125 mL) grated Parmesan cheese
  • Salt and pepper, to taste
How to cook Clams wih Parmesan Cheese:
  • Remove clams from shells, reserving both, clams and shells.
  • Finely chop steamed clams set aside.
  • Into a clean casserole, melt remaining 1 tablespoon (15 mL) butter.
  • Mix in chopped parsley and chives, minced garlic and chopped onion cook for 3 to 4 minutes, over medium heat.
  • Mix in chopped celery cook for 2 to 3 minutes more.
  • Delicately mix in chopped tomatoes well season with salt and pepper cook for 4 to 5 minutes, over high heat.
  • Mix in reserved chopped clams cook for 2 minutes more.
  • Mix in half or grated Parmesan cheese check for seasonings.
  • Spoon mixture into reserved shells evenly sprinkle with remaining grated Parmesan cheese.
  • Arrange stuffed shells onto a large baking sheet, grated cheese on top.
  • Broil for 2 to 3 minutes.
  • Serve.
