Coconut-Sesame Crusted Cod Fingers Recipe

Serves/Makes: 3-4 servings


  • 1 pound cod fillet
  • Salt and freshly grated black pepper to taste
  • 3 eggs
  • 2 ounces sesame seeds
  • 2 ounces coconut flakes
  • 2 ounces flour
  • 1 cup canola or vegetable oil for frying
  •     For Vinegared Cucumber Salad:
  • 1 seedless cucumber
  • 1 small red chili pepper, stems and seeds removed, cut into thin rings
  • 1 bunch green onions, finely chopped
  • 2 tablespoon sugar
  • 1/4 vinegar
  • 1/2 cup water
  • Salt and freshly grated black pepper to taste
How to cook Coconut-Sesame Crusted Cod Fingers:
  • Rinse the fish fillet under running cold water and pat dry with paper towels.
  • Cut the fillet into finger-sized portions, season with salt and black pepper, and place in refrigerator.
  • Meanwhile prepare the vinegared cucumber salad.
  • Mix sugar, vinegar and 1/2 cup of water, bring to a boil, and cook for about 5 minutes over medium heat. Remove the dressing from the heat and allow to cool. Slice cucumber very thinly on a mandolin, or as thinly as you can with a knife.In a bowl combine cucumber with green onions and chili, pour in the dressing.
  • Season with salt and black pepper and mix. Let stand aside while you cook the cod fingers.
  • Beat eggs with a little water. Mix the coconut flakes with sesame seeds.
  • Roll the cod fingers first in flour, then in beaten egg, and then in sesame-coconut mixture, coating fingers thoroughly.
  • Heat oil a large heavy skillet until just sizzling.
  • Fry the cod fingers until all sides are golden brown and just cooked through.
  • Using a slotted spoon, transfer the fried fingers to paper towels to remove excess oil.
  • Serve the fried cod fingers with the cucumber salad and a side dish of your choice.
  • Goes well with rice, French fries or mashed potatoes.
