  • Wipe out the pan with paper towels, return to medium heat and pour the broth and lemon juice.
  • Simmer until liquid is reduced by half. Add lemon zest, capers, parsley, and butter.

*The 'cod loin' are simply cuts taken from the middle part of a filleted cod side. This is considered to be the best part of the cod.

The Cod Piccata recipe very easy to cook and very tasty too!

Veal piccata or picatta is a traditional Italian dish.

Breaded in a small amount of flour or breadcrumbs veal cutlets are fried until golden brown. Piccata is served with sauce usually containing lemon juice, white wine, shallots or garlic, capers and lemon slices or lemon zest.

In the United States, piccata is also commonly made with chicken instead of veal.

It is very tasty and also quite easy to prepare, especially in small batches.
The dish is often accompanied by pasta, potatoes, polenta, or rice.

In this recipe I propose my own version of piccata, by changing the main ingredient (chicken or veal) to cod.
I use also chicken broth instead of white wine.
