Crab Meat with Wild Rice and Mushrooms Recipe
Serves/Makes: 6
Ingredients:
- 1 pound flaked or lump crab meat
- 7 ounces long grain wild rice
- 2 cup sliced fresh mushrooms
- 2 tablespoons extra dry vermouth
- 1/3 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- Remove any remaining shell or cartilage from crab meat and set aside. In a large skillet or lidded pot, cook rice according to package instructions.
- Add mushrooms 5 minutes before rice is done.
- Add crab meat and remaining ingredients.
- Cook an additional 2 minutes, stirring gently.
- Serve immediately.
