Crispy Tilapia with Yogurt & Cucumber Sauce Recipe

Serves/Makes: 1 serving

Ingredients:

  • 1 tilapia (or any fish you have) fillet, about 4 - 5 ounces
  • Salt and pepper, to taste
  • Fine bread crumbs
  • Cooking oil for frying
  • Lettuce leaves, to serve
  •     For Yogurt & Cucumber Sauce:
  • 1/4 large cucumber, peeled
  • 1 tablespoon plain low-fat yogurt
  • A spritz fresh lemon juice
  • 1 tablespoon chopped cilantro
  • A pinch chili flakes
  • Salt and pepper, to taste
  • Cayenne powder, to taste (optional)
How to cook Crispy Tilapia with Yogurt & Cucumber Sauce:
  • Season the fish with salt and pepper, then dredged in fine bread crumbs.
  • Heat the cooking oil and fry the fish, about 2 minutes on each side and place on paper towels to absorb excess oil.
  • Grate the cucumber (I recommend a coarse grate) directly into a bowl. No need to scrape off the seeds. Just keep grating until you hit the seeds then stop. Add all the yogurt & cucumber sauce ingredients and mix.
  • To serve, place the lettuce leaves (whole or torn) on a plate. Arrange the fried tilapia on top of the bed of lettuce.
  • Spoon the yogurt & cucumber sauce over the fish. Sprinkle with cayenne pepper, if you like.
