Easy Baked Whole Sturgeon Recipe

Serves/Makes: 4 - 6 servings


  • 1 whole sturgeon, about 2 pounds
  • 1 small herb bunch
  • 1/2 tablespoon fresh lemon juice
  • 1/2 pint white wine
  • 1/4 pound butter
  • Salt and pepper; to taste
  • Greens, lemon wedges, and black olives (to garnish)
How to cook Easy Baked Whole Sturgeon:
  • Clean the fish thoroughly and skin it.
  • Lay the sturgeon in a large fireproof dish, sprinkle over the seasoning and herbs very finely minced, and moisten with the lemon juice and wine.
  • Place the butter in small pieces over the whole of the fish, put into a moderate oven (350°F, Gas 4) for about 50-40 minutes, and baste frequently.
  • Bake until brown, then serve with its own gravy.
