Filipino Boiled Dumplings (Siomai) Recipe

Serves/Makes: 4 - 6


  • 1 cup shelled, deveined and chopped shrimps
  • 1/4 cup ground pork or beef
  • 1 cup minced water chestnuts
  • 1/4 cup minced scallions
  • 1/2 cup minced onion
  • 1 egg
  • I teaspoon freshly ground pepper
  • I teaspoon salt
  • Soy sauce and lemon slice to garnish
How to cook Filipino Boiled Dumplings (Siomai):
  • Mix all the ingredients for the filling in a bowl.
  • Spoon 1 tablespoon of the mixture into each wrapper (see the recipe below).
  • Fold and seal. Arrange in a steamer and steam for.30 minutes.
  • Serve with soy sauce and lemon slices.

Wrapper Recipe

Wrapper Ingredients:
  • 1 cup water
  • 1 tablespoon vegetable or com
  • Cooking oil
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
How to cook Wrapper:
  • Bring water, cooking oil and salt to a boil, then pour in flour.
  • Remove from heat and beat until mixture forms a ball.
  • Divide the dough into 1/4 -inch balls.
  • Roll each ball on a floured board until paper thin. Set aside.

It is either steamed or fried resulting in a crispy exterior. It is normally dipped in soy sauce and squeezed calamondin, and for some, with an oily, spicy garlic mix.
