Fish Cakes - 2 Recipe
Serves/Makes: 4
Ingredients:
- 2 cups (500 mL) cooked fish
- 1 onion, finely chopped
- 4 cups (1 L) crushed boiled potatoes
- 1/2 cup (125 mL) chopped celery
- Salt and pepper, to taste
- 2 eggs, beaten
- Breadcrumbs
- Shortening
- Fry onion into hot shortening.
- Stir in crushed potatoes, cooked fish, chopped celery, salt and pepper.
- Thoroughly mix.
- Mix in beaten eggs.
- Shape into cakes; roll each cake into breadcrumbs.
- Brown cakes into hot shortening, until golden.
