Fish Poached in Milk Recipe

Ingredients:

  • 1 (2-pound / 1-kg) fish
  • Cold water
  • 1 tablespoon (15 mL) coarse salt
  • 2 cups (500 mL) milk
  • 2 tablespoons (30 mL) butter
  • 2 tablespoons (30 mL) flour
How to cook Fish Poached in Milk:
  • Cut fish into individual servings.
  • Cover fish with cold water, sprinkle with coarse salt and soak fish for 5 minutes; drain.
  • Pour milk into a 6-cup (1.5-L) microwave-safe dish.
  • Cover and microwave for 2 minutes on 'HIGH''.
  • Transfer fish into boiling milk; cover and microwave on ''HIGH'' for 4 minutes per pound (454 g).
  • Using a slotted spoon, remove fish from dish.
  • Cream together butter and flour; mix into hot milk mixture.
  • Stir well.
  • Microwave for 2 minutes, uncovered.
  • Stir well.
  • If sauce is too thin, cook sauce for 1 minute longer or as needed.
  • Serve fish, along with sauce.

Notes:

Oven: 700 watts
Preparation time: 8 minutes
Cooking time: 6 to 15 minutes

Hint:

Do not microwave more than 3 pounds (1.5 kg) fish at a time.
