Fish Poached in Milk Recipe
Serves/Makes: 4
Ingredients:
- 1 (2-pound / 1-kg) fish
- Cold water
- 1 tablespoon (15 mL) coarse salt
- 2 cups (500 mL) milk
- 2 tablespoons (30 mL) butter
- 2 tablespoons (30 mL) flour
- Cut fish into individual servings.
- Cover fish with cold water, sprinkle with coarse salt and soak fish for 5 minutes; drain.
- Pour milk into a 6-cup (1.5-L) microwave-safe dish.
- Cover and microwave for 2 minutes on 'HIGH''.
- Transfer fish into boiling milk; cover and microwave on ''HIGH'' for 4 minutes per pound (454 g).
- Using a slotted spoon, remove fish from dish.
- Cream together butter and flour; mix into hot milk mixture.
- Stir well.
- Microwave for 2 minutes, uncovered.
- Stir well.
- If sauce is too thin, cook sauce for 1 minute longer or as needed.
- Serve fish, along with sauce.
