Flambeed Shrimps Recipe

Ingredients:

  • 20 shrimp tails
  • 1 tablespoon (15 mL) vegetable oil
  • 2 tablespoons (30 mL) butter
  • 1/2 pound (227 g) fresh mushrooms, cleaned and diced
  • 1/4 cup (60 mL) Cognac
  • 1 cup (250 mL) plain yogurt
  • 1 tablespoon (15 mL) freshly chopped parsley
  • Few drops lemon juice
  • Pinch of paprika
  • Salt and pepper, to taste
  • Lemon segments, to decorate
How to cook:
  • Into a fry pan, heat together vegetable oil and half of butter.
  • Add shrimp tails, generously salt and pepper.
  • Fry for 2 to 3 minutes, over high heat, stirring once.
  • Remove shrimp tails from fry pan reserve.
  • Add remaining butter to fry pan.
  • Add mushroom dices salt and pepper.
  • Cook for 3 minutes, over medium-high heat.
  • Pour in Cognac flambe and then cook for 2 minutes more.
  • Mix well.
  • Stir in yogurt, chopped parsley, lemon juice and paprika.
  • Cook for 2 to 3 minutes more, at medium heat.
  • Arrange shrimp tails back in sauce simmer for 1 to 2 minutes.
  • Serve, decorated with lemon segments.
