Fried Mahi-Mahi Fillets with Salsa Recipe

Serves/Makes: 4 serving

Ingredients:

  • 2 pounds mahi-mahi or sea bass fillet
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon granulated garlic
  • 1 tablespoon lime juice
  • Salt to taste
  • 3-4 egg whites, lightly beaten
  • 1 1/2 cups dry breadcrumbs
  • 3-4 ounces olive oil for frying
  • 1 large or 2 small avocado, sliced - to serve
  •     For Salsa:
  • 1 pound tomatoes (about 2 large), diced
  • 1/2 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/2 bunch cilantro, finely chopped
  • 6 fresh basil leaves, finely chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • Salt to taste
How to cook Fried Mahi-Mahi Fillets with Salsa:
  • Rinse the fish fillet under running cold water and pat dry with paper towels.
  • Cut the fillet into portion size. Season with granulated garlic, salt and pepper. Drizzle with lime juice and let marinate in the fridge for about 2 hours.
  • Dip each fish fillet in beaten egg whites and then coat them with breadcrumbs.
  • Heat olive oil over medium-high heat until hot and fry the fish fillets (4-5 fillets at a time) until golden brown, about 3-4 minutes per side.
  • Place the fried cod fillets on paper towels to absorb excess oil.
  • To prepare salsa: combine all ingredients in a boil and mix.
  • Serve the fried mahi-mahi fillets with salsa and slices of avocado.
