Fried Porgy with Rosemary Sauce (Psari Savoro) Recipe

Serves/Makes: 4 - 6 servings

Ingredients:

  • 4 - 6 porgy (sole or flounder) fillets, about 6 ounces each
  • All-purpose flour for dredging
  • Salt and pepper to taste
  • Olive oil for frying
  • Rosemary Sauce (see the recipe below)
How to cook Fried Porgy with Rosemary Sauce (Psari Savoro):
  • Dip fish in flour and sprinkle with salt and pepper. Fry in 1 inch hot oil in a large skillet until brown on both sides.
  • Cover the fried porgy fillets with Rosemary Sauce.
  • Cover with the lid immediately and let stand at least 1 hour before serving.
  • Serve the Fried Porgy with Rosemary Sauce at room temperature or reheat gently.

Rosemary Sauce (Saltsa Savoro) Recipe

Rosemary Sauce (Saltsa Savoro) Ingredients:

    Makes about 1 1/2 cups

  • 1/2 cup olive oil
  • 3 tablespoons all-purpose flour
  • 1/3 cup white vinegar
  • 1 tablespoon tomato paste
  • 2 cups water
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
How to cook Rosemary Sauce (Saltsa Savoro):
  • Heat olive oil. Add flour and then vinegar and continue to stir.
  • Dilute tomato paste in water and add to pan with garlic, rosemary, bay leaf, salt, and pepper.
  • Cook over medium heat, stirring, until sauce thickens.
  • Remove bay leaf and refrigerate for several hours. Serve at room temperature.
