Fried Red Grouper with Peach Chutney Recipe

Serves/Makes: 4 servings

Ingredients:

  • 2 pounds red grouper or Acadian redfish steaks, about 2-inch thick
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For Peach Chutney:

  • 1 pound fresh peaches
  • 1 tablespoon olive oil
  • 3 ounces finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 2 ounces sugar
  • 1/2 cup small black grapes
  • 1/4 teaspoon curry powder
  • Salt and pepper to taste
How to cook Fried Red Grouper with Peach Chutney:
  • Peel the peaches, dropping for 10 seconds in boiling water and immediately dipped in cold water.
  • Remove the seeds and chop the peaches into small cubes
  • Saute onion in a frying pan with olive oil until soft Add minced garlic.
  • A minute later, pour the vinegar; add sugar, curry and small grapes.
  • Season whit salt and pepper (if needed).
  • Cook on low heat until the mixture becomes like a syrup, about 5 minutes.
  • Add peaches and cook until they soften, about 8-10 minutes.
  • If the mixture is very thick, add a little boiling water.
  • The fish steaks fry on both sides in olive oil, til done.
  • Place the fried fish on the serving plate and pour the peach chutney over each steak.
  • Serve the Fried Red Grouper with Peach Chutney hot, garnished with quartered eggs, lemon slices and chopped greens.
