Ginisang Mais (Corn Soup) with Bangus Recipe

Serves/Makes: 4 - 6 servings

Ingredients:

  • 1 whole (about 1 1/2 pounds) Bangus, cleaned and sliced into 5 pieces
  • 2 cups, freshly grated white corn
  • 1 bunch, green chili leaves
  • 1/2 cup, shrimp paste (bagoong na alamang/hipon)
  • 4 cloves garlic, minced
  • 1 medium sized onion, chopped
  • 6 - 8 cups water
  • Cooking oil
  • Salt and pepper to taste
How to cook Ginisang Mais (Corn Soup) with Bangus:
  • In a casserole, heat oil and saute garlic, onion until translucent.
  • Add shrimp paste, stir, cook for a minute.
  • Add grated white corn, stir and simmer for 1 - 2 minutes.
  • Pour water, bring to boil and continue to simmer for 25 - 30 minutes, add more water to adjust consistency to your liking (soupy or not too soupy).
  • Stir. Put the bangus and simmer for 5 minutes.
  • Season with salt and pepper according to taste.
  • Now add in the green chili leaves, stir carefully and turn off the stove.
  • Transfer in a serving bowl and serve the Ginisang Mais with Bangus hot with steamed white rice and bagoong or patis (Filipino fish sauce), if desired.

Notes:

The Ginisang Mais (Corn Soup) with Bangus is a very affordable dish. This recipe is delicious, simple, and really easy to cook.
Ginisang na Mais or Suam na Mais is a rich corn flavored soup.

Comments:

A authentic Filipino style corn soup with creamy freshly grated corn and verdant chili leaves. Ginisang Mais or Suam na Mais traditionally uses native sticky variety of white corn. To make the dish the corn kernels are grated straight from the cobs.
Ginisang Mais or Suam na Mais have different version, according to the availability of the ingredients. In this recipe, I add bangus (milkfish) instead of pork, chicken or shrimp.

Tips:

  • If freshly corn not available, you can use canned creamed corn kernels as substitute.
  • If green chili leaves is not available, use malungay, spinach, and ampalaya leaves as substitute.
