Grilled Halibut with Green Tomato Salsa Recipe

Serves/Makes: 4 servings

Ingredients:

  • 4 halibut or cod fillets (about 6 to 8 ounces each), 1 inch thick
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Coarse salt and freshly ground pepper
  • 2 cups Green Tomato Salsa, to serve (recipe follows)
  • Additional olive oil, to cook a coulis*
How to cook Grilled Halibut with Green Tomato Salsa:
  • In a large resealable plastic bag or airtight plastic container, combine oil and lemon juice. Shake well. Add the halibut fillets, and toss them gently until coated with marinade. Refrigerate 30 minutes.
  • Meanwhile, heat a grill or grill pan on medium-high heat. Remove the fish fillets from the marinade. Let excess marinade drip off, and discard.
  • Season with salt and pepper. Grill the fish until browned and cooked through, 2 to 3 minutes per side.
  • Serve the Grilled Halibut immediately immediately over a coulis, made by pureeing the Green Tomato Salsa until smooth and adding olive oil until the mixture is the desired consistency.

Green Tomato Salsa Recipe

Green Tomato Salsa Ingredients:

    Makes about 2 cups

  • 1/2 poblano chili
  • 1 pound (about 3 medium) green tomatoes, seeded and finely chopped
  • 1/2 small or 1/4 large Vidalia or other sweet onion, finely chopped
  • 2 scallions, sliced thinly crosswise
  • 1/2 medium cucumber, peeled, seeded, and finely chopped
  • 1 tablespoon freshly squeezed lime juice, about 1 lime
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup finely chopped fresh cilantro
  • Coarse salt and freshly ground pepper
How to cook Green Tomato Salsa:
  • Roast chili directly on a gas-stove burner over high heat, or under the broiler, turning as each side blackens.
  • Transfer to a bowl; cover with plastic. Let stand until cool enough to handle.
  • Peel off skin; discard stem and seeds. Finely chop chili, and place in a medium bowl.
  • Add tomatoes, onion, cucumbers, scallions, lime juice, oil, and cilantro. Stir. Season with salt and pepper; let stand 30 minutes. Store in refrigerator up to 3 days.
