Grilled Sturgeon with Parsley Pesto Recipe

Serves/Makes: 4 - 6 servings

Ingredients:

  • 2 ponds wild sturgeon fillets, cut them into portions
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil
  • Parsley Pesto Sauce:

  • 2 cloves garlic
  • 2 cups packed, stemmed Italian parsley
  • Coarse salt, to taste
  • 1/4 cup pine nuts
  • 1/2 cup freshly grated parmegiano reggiano, or to taste
  • 2/3 cup olive oil
  • Salt and pepper, to taste
How to cook Grilled Sturgeon with Parsley Pesto:

    For Parsley Pesto Sauce:

  • In a food processor place the garlic, parsley, pinch salt, pine nuts, and cheese.
  • Process until they form a paste. Gradually blend in olive oil, taste and adjust your seasoning if necessary.

    For the Sturgeon:

  • Place the sturgeon and the salt in a bowl and cover with water, let sit for about 10 minutes and rinse.
  • Rub the olive oil and spicy coriander seasoning all over the fish and let marinate in the refrigerator for a couple of hours.
  • Preheat oven to 400°F / 200°C (skip if only grilling).
  • Heat the grill and place the sturgeon on the grill, grill for about 5 minutes per side.
  • Transfer to oven safe dish and bake for about 15-20 minutes.
  • Serve Grilled Sturgeon immediately with Parsley Pesto Sauce.

Keep this in mind when you prepare sturgeon because it may become a bit tough with a more pronounced fish flavor when overcooked.
