Grilled Swordfish Steaks with Basil Butter Recipe

Serves/Makes: 3 servings

Ingredients:

  • 3 swordfish steaks, about 8 ounces each and cut 1 inch thick
  • 1 tablespoon olive oil
  • 1 tablespoons freshly squeezed lemon juice
  • Kosher salt and freshly ground black pepper
  • 1 teaspoon olive oil for greasing the grill
  •     For Basil Butter:
  • 3 tablespoons softened butter
  • 1 teaspoon finely chopped fresh basil
  • 1 teaspoon drained finely chopped capers
  • 1 tablespoons freshly squeezed lemon juice
How to cook Grilled Swordfish Steaks with Basil Butter:
  • Rinse the fish steaks under running cold water and pat dry with paper towels.
  • Season with salt and pepper. Drizzle with 1/2 tablespoon of lemon juice and 1/2 tablespoons of olive oil.
  • Set aside to marinate for 15-20 minutes.
  • Place the butter, lemon juice, capers, and basil in a small bowl and mix well. Set aside until ready to serve.
  • Light your charcoal or gas grill. Wait until it is very hot.
  • Brush grill with olive oil. Grill the swordfish steaks until opaque throughout about 7-8 minutes (5 minutes on one side and 2-3 minutes on the other).
  • To avoid drying out the fish, do not leave unattended.
  • When ready, transfer the grilled swordfish steaks to plates. Top each piece of fish with 1 tablespoon of the basil butter. Allow to rest for 2 to 3 minutes before serving.
  • Serve the grilled swordfish steaks with lemon wedges.
  • For a side dish I had mashed potatoes with spinach.
