Grilled Swordfish with Citrus Pesto Recipe

Serves/Makes: 4 servings

Ingredients:

  • 4 swordfish steaks, about 8 ounces each (I had one 2 pounds steak)
  • 1 teaspoon olive oil for greasing the grill
  • Juice of one lemon
  • 1/2 teaspoon (or taste) salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil
  •     For Citrus Pesto:
  • 1 large bunch of fresh basil, stemmed
  • 1/2 cup pine nuts, toasted
  • 1 clove garlic
  • Zest of one lemon
  • Juice of one lemon
  • 1/4 cup orange juice
  • 1/2 cup olive oil
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon (or taste) salt
How to cook Grilled Swordfish with Citrus Pesto:
  • Remove the bone and skin from the steak, if any. Rinse the fish steaks under running cold water and pat dry with paper towels.
  • If steak is very large, cut it into portions. Season with salt and pepper. Drizzle with lemon juice and olive oil. Set aside to marinate for 15-20 minutes.
  • To prepare the pesto: in a food processor or blender, combine all pesto ingredients except olive oil and cheese.
  • While blender is running, slowly pour in olive oil. Blend until smooth and creamy.
  • Transfer to a bowl and stir in the Parmesan cheese.
  • Light your charcoal or gas grill. Wait until it is very hot.
  • Brush grill with olive oil. Grill the swordfish steaks until opaque throughout about 3 to 4 minutes on each side for a 1-inch thick fillet.
  • To avoid drying out the fish, do not leave unattended.
  • When ready, transfer the grilled swordfish steaks to plates.
  • Serve the grilled swordfish steaks with pesto and lemon wedges.
  • For a side dish I had sweet potato fries.
