Grilled Swordfish with Cucumber Salsa Recipe

Ingredients:

  • 2 pounds fresh swordfish steaks (about 1 inch thick)
  • Salt and pepper to taste
  • Juice of 1 lime
  • Cucumber Salsa (see recipe below)
How to cook:
  • Season the swordfish steaks with salt and pepper.
  • Preheat the grill and brush oil on the griddle to minimize sticking.
  • Grill the swordfish steaks for 4-5 minutes per side, turning only once, and basting with the lime juice.
  • To serve top the grilled swordfish with Cucumber Salsa.
Cucumber Salsa Ingredients:
  • 1/2 cup diced red bell pepper
  • 1/2 cup cucumber (peeled, seeded, and diced)
  • 1/2 diced red onion
  • 2 tablespoons chopped fresh dill
  • Juice of 1 lime
  • Salt and pepper to taste
Cucumber Salsa Preparation:
  • Combine bell pepper, cucumber, onion, dill and lime juice.
  • Salt and pepper to taste.

Note:
