Guacamole and Shrimp Crostini Recipe

Serves/Makes: 10 crostini


  •     For Crostini:
  • 10 baguette slices, about 1/3 inch thick
  • 1-2 tablespoons olive oil
  • Salt to taste
  •     For Guacamole:
  • 2 large ripe avocados
  • Juice of 1 lime
  • 1 ripe fleshy tomato, diced
  • Salt to taste
  •     For Fried Shrimp:
  • 1 tablespoon olive oil
  • 10 ounces peeled shrimp
  • 1/4 teaspoons red pepper flakes
  • Salt to taste
How to cook Guacamole and Shrimp Crostini:
  • To prepare crostini, preheat oven to 390°F (200°C).
  • Cover a baking tray with foil and arrange baguette slices on it.
  • Drizzle with olive oil and season lightly with salt.
  • Bake until golden, for about 10-12 minutes. Turn once about halfway through cooking. Ideally, they should be crisp on the outside, but still soft with-in.
  • Let cool on the baking tray.
  • To prepare guacamole, blend the scooped avocado pulp and lime juice until thick paste, but not too creamy.
  • Add the diced tomato and salt. Mix well.
  • To prepare fried shrimp, season shrimp with salt and red pepper flakes.
  • Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat and quickly fry shrimp until turns pink.
  • Spread guacamole on crostini and top with fried shrimp.
