- 14-ounces firm black olives
- Scant 1 cup olive oil
- 1/2 onion, finely chopped
- Pit the olives with the appropriate utensil, keeping them neat as possible.
- Saute the onion, garlic, anchovy fillets and oregano in the olive oil for 5 minutes over moderate heat, then pour the flavored oil through a sieve on to the pitted olives.
