Italian Black Olives in Anchovy Dressing Recipe

Serves/Makes: 4

Ingredients:

  • 4 anchovy fillets
  • 14-ounces firm black olives
  • Scant 1 cup olive oil
  • 1/2 onion, finely chopped
  • Oregano
How to cook Italian Black Olives in Anchovy Dressing:
  • Pit the olives with the appropriate utensil, keeping them neat as possible.
  • Saute the onion, garlic, anchovy fillets and oregano in the olive oil for 5 minutes over moderate heat, then pour the flavored oil through a sieve on to the pitted olives.
