Italian Seafood Mix Stew Recipe

Ingredients:

  • 1 pound catfish, cut into chunks
  • 1 pound mussels, scrubbed and bearded
  • 1/2 pound cooked prawns (shrimps), peeled
  • 1 can tinned tomatoes
  • 1 pint fish stock or water
  • 6 ounces white wine
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon dried basil or oregano
  • 1 pinch cayenne pepper
  • Fresh basil or parsley, chopped
How to cook Italian Seafood Mix Stew:
  • Heat the oil in a casserole and quickly seal the catfish chunks, remove with a slotted spoon and keep to one side.
  • Fry the onion and garlic until soft. Add the basil, cayenne, tomatoes, stock and wine and simmer for about 15 minutes.
  • Add the catfish and simmer for about 5 minutes.
  • Add the mussels and prawns and simmer for a couple of minutes, until the mussels have opened, discard any that have not opened after 2 minutes.
  • Add the parsley or basil and serve the Seafood Mix Stew with Italian crusty bread.
