Korean Noodles in Anchovy Broth with Squid Recipe

Korean Noodles in Anchovy Broth with Squid recipe Serves/Makes: 2

Ingredients:

  • 6 medium shrimps, cleaned
  • 1 cup squid, cleaned, sliced
  • 10 Korean dried anchovies (myeol chi)
  • Several imitation crab meat
  • 2 bunches noodles (so myon)
  • 4 shiitake mushrooms (pyo go beo seot), halved
  • 1/4 cup kimchi, squeezed
  • 1/2 onion
  • 2 green onions
  • 1/2 tablespoon minced garlic
  • 1 teaspoon soy sauce
  • 1 tablespoon Korean chili powder (goo choo ga roo)
  • Salt and pepper to taste
How to cook Korean Noodles in Anchovy Broth with Squid:
  • In a pot add 7 cups of water and anchovies, bring to a boil, simmer for 10 minutes.
  • Add kimchi, garlic and chili powder, cook for a minute. Add squid, bring to a boil.
  • Put noodles, onion, shrimp, mushroom and crab meat, let boil for 4-5 minutes until noodles are done.
  • Season the seafood noodle soup with soy sauce salt and pepper and serve hot.
