Lemon Pepper Fish with Lemon Butter Rice Recipe

Serves/Makes: 4 servings

Ingredients:

  • 4 whitefish (or red snapper, halibut, catfish, etc.) fillets, about 6 ounces each
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon lemon pepper
  • 1 teaspoon creole seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • Pinch of cayenne pepper
  • Juice of 1 lemon
  • 1/2 stick butter
  • Sliced lemon wedges
  • Lemon Butter Rice (see the recipe below) to serve
How to cook Lemon Pepper Fish with Lemon Butter Rice:
  • Rinse fish and pat dry.
  • Mix seasoning blend and set aside.
  • Coat fish and olive oil and lemon juice.
  • Season both sides of fish with spice blend.
  • Marinate fish in the refrigerator covered for 1 hour or overnight.
  • Preheat oven to 425°F (220°C).
  • Remove fish from refrigerator and bring to room temperature.
  • Top fish with butter wedges and sliced lemon.
  • Bake fish at 425°F (220°C) for about 20-25 minutes.
  • Prepare the delicious Lemon Butter Rice while the fish is baking.
  • Broil for 2 minutes to brown the top of the fish.
  • Serve with the Lemon Butter Rice aside.
  • Don’t forget to baste your fish with the lemon butter pan juices before serving.

Lemon Butter Rice Recipe

Lemon Butter Rice Ingredients:
  • 4 1/2 cups chicken broth, low sodium
  • 3 cups basmati or jasmine rice
  • Juice of 1 lemon
  • 1 stick butter
  • 2 teaspoons dried parsley
  • 1 teaspoon black pepper
How to cook Lemon Butter Rice:
  • Add broth, butter, lemon juice, parsley and spices to a saucepan, bring to boil.
  • Stir in rice, cover, reduce heat to low and simmer for 16-18 minutes.
  • Remove rice from heat and allow to steam for 10 minutes before serving.
  • Allow rice to steam about 5 more minutes.
