Mahi-Mahi with Bok Choy in Oyster Sauce Recipe

Serves/Makes: 4 - 5 servings

Ingredients:

  • 2 pounds mahi-mahi (or any firm, white-fleshed fish) fillet, cut into serving size pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons extra-virgin olive oil
  •     For Bok Choy in Oyster Sauce:
  • 2 pounds baby bok choy
  • 3 ounces chicken broth
  • 4 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons extra-virgin olive oil
  • 1 inch fresh ginger, finely chopped
  • 4 cloves garlic, finely chopped
How to cook Mahi-Mahi with Bok Choy in Oyster Sauce:
  • Sprinkle the mahi-mahi fillets with salt, pepper and garlic powder. Drizzle with olive oil and place in the refrigerator to marinate while you cook the bok choy.
  • Put the bok choy into boiling salted water and cook for about a minute, immediately drain and rinse it under a cold water.
  • Mix chicken broth, oyster sauce, soy sauce, rice vinegar, and cornstarch; set aside.
  • Heat a wok or large skillet over high heat. Add olive oil. Stir-fry the finely chopped ginger and garlic for 15 seconds.
  • Then put into the wok the bok choy and stir-fry about 1 minute. Add the broth-oyster sauce mixture and continue to cook 1 more minute. Remove the wok from the heat and set aside.
  • Prepare the grill but make sure that you properly cleaned and oiled its grate.
  • Place the pieces of fish on the grill grate and fry about 5 - 6 minutes on each side.
  • Transfer the grilled mahi-mahi to serving plates and serve immediately with the bok choy in oyster sauce.
