Oyster with Cider Recipe

Ingredients:

  • 48 oysters on the shell with juice
  • 3 tablespoons (45 mL) butter
  • 4 shallots, finely chopped
  • 1 tablespoon + 2 teaspoons (25 mL) flour
  • 1 1/2 cups (375 mL) cider
  • Pepper from the mill
  • 4 1/2 ounces (125 g) Old Cheddar cheese, finely grated
  • Coarse salt
How to cook:
  • Brush oyster shells under cold running water.
  • Open oyster shells; reserve juice and oysters in separate bowls.
  • Separate each shell into 2 parts; reserve deeper halves.
  • Melt butter; lightly brown shallots.
  • Slowly whip in flour; pour in cider and oysters'juice.
  • Pepper to taste; mix well.
  • Simmer for approximately 4 minutes; take away form heat.
  • Arrange 1 oyster into each reserved shell; coat with cider sauce.
  • Onto a baking sheet, steady oyster shells onto coarse salt.
  • Sprinkle with grated cheese.
  • Brown in preheated 400 degrees F (200°C) oven, for approximately 4 minutes.
