Oyster with Cider Recipe
Serves/Makes: 8
Ingredients:
- 48 oysters on the shell with juice
- 3 tablespoons (45 mL) butter
- 4 shallots, finely chopped
- 1 tablespoon + 2 teaspoons (25 mL) flour
- 1 1/2 cups (375 mL) cider
- Pepper from the mill
- 4 1/2 ounces (125 g) Old Cheddar cheese, finely grated
- Coarse salt
- Brush oyster shells under cold running water.
- Open oyster shells; reserve juice and oysters in separate bowls.
- Separate each shell into 2 parts; reserve deeper halves.
- Melt butter; lightly brown shallots.
- Slowly whip in flour; pour in cider and oysters'juice.
- Pepper to taste; mix well.
- Simmer for approximately 4 minutes; take away form heat.
- Arrange 1 oyster into each reserved shell; coat with cider sauce.
- Onto a baking sheet, steady oyster shells onto coarse salt.
- Sprinkle with grated cheese.
- Brown in preheated 400 degrees F (200°C) oven, for approximately 4 minutes.
