Oysters Taranto Style Recipe
Serves/Makes: 4
Ingredients:
- 24 very fresh oysters
- Salt
- 3 tablespoons chopped parsley
- 3 tablespoons fine breadcrumbs
- Freshly ground black pepper
- Olive oil
- 2 lemons
- Open the oysters with a oyster knife; rinse the half shells containing the oysters in cold, salted water; drain and then cover the bottom of a large ovenproof pan (or two) with a single layer of them.
- Sprinkle plenty of parsley, breadcrumbs, and freshly ground pepper on each oyster on its half shell.
- Drizzle a little olive oil over them and cook in a preheated oven at 325 degrees for 1/4 hour.
- Serve hot, with lemon wedges.
Notes:
The Italian name for the Oysters Taranto Style dish is Ostriche alla Tarantina.
