Serves/Makes: 4 to 6

Ingredients:

• 1 pound (454 g) raw shellfish (shelled shrimps, scallops and crab meat)
• 1/2 cup (125 mL) white wine
• 3 small carrots, sliced
• 12 ounces (340 g) linguine pasta
• 2 tablespoons (30 mL) butter
• 1 clove garlic, finely minced
• 1 1/2 cups (375 mL) small fresh mushrooms
• 1 cup (250 mL) heavy cream
• 1/2 cup (125 mL) grated Parmesan cheese
• 1 1/2 tablespoons (22.5 mL) soft butter
• 1 1/2 tablespoons (22.5 mL) flour
• Salt and pepper to taste

How to cook:

• Bring white wine to a boil.
• Add seafood, except crab meat.
• Cover and bring back to a boil.
• Take away from heat; leave to rest, covered.
• Boil carrot slices in salted boiling water for 5 minutes; drain and rinse under cold running water.
• Cook linguine pasta according to package directions.
• Meanwhile, in a large fry pan, melt 2 tablespoons (30 mL) butter.
• Lightly brown garlic and mushrooms.
• Add carrot slices, cream, grated Parmesan cheese, seafood with juice and crab meat.
• Bring to a boil.
• Well mix together soft butter and flour.
• Add butter/flour mixture to seafood mixture, stirring until thickened.
• Check for seasonings.
• Serve the Seafood Primavera over hot pasta.

Note:

For a more colourful dish, add some broccoli floweriest along with the carrots.
