Pasta with Salmon Recipe
Serves/Makes: 4
Ingredients:
- 1 (15-ounce / 426-mL) can salmon
- 1/2 pound (227 g) fettucine noodles
- 2 tablespoons (30 g) butter
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 cup (250 mL) cream (35%)
- Salt and pepper, to taste
- 1 tablespoon (15 mL) paprika
- 1/2 teaspoon (2.5 mL) nutmeg
- 1/2 pound (227 g) fresh asparagus tips
- 1/3 cup (75 g) grated Parmesan cheese
- 1/4 cup (60 mL) freshly chopped parsley
- Boil fettucine noodles until done; drain and set aside.
- Meanwhile, into a casserole, melt butter.
- Brown together onion and garlic.
- Pour in cream; bring to a boil.
- Salt, pepper, season with paprika and nutmeg, then add asparagus tips.
- Drain and then crumble salmon into sauce.
- Sprinkle with grated Parmesan cheese.
- Mix together sauce and reserved pasta.
- Serve, sprinkled with freshly chopped parsley.
