Pinoy Stewed Milkfish in Tamarind Recipe

Serves/Makes: 4 - 6 servings

Ingredients:

  • 1 large size bangus (milkfish), cleaned, sliced into serving pieces
  • 4 - 5 cups rice washing or water
  • 3 tomatoes, sliced
  • 1 onion, sliced
  • 1 medium size white radish (labanos), sliced diagonally
  • 1 bunch yardlong beans (sitaw), cut into 2-inch long
  • 5 okra
  • 1 large size eggplant (talong), sliced diagonally
  • 2 green finger chili pepper (siling haba)
  • 1 cup tamarind juice* or 1 sachet tamarind powder
  • Patis (Filipino fish sauce) or salt to taste
  • 1 cup kangkong (water or swamp spinach)
How to cook Pinoy Stewed Milkfish in Tamarind:
  • In a casserole pot, put in the rice wash, tomatoes, onion, radish, yardlong beans and okra.
  • Simmer for few minutes in medium heat.
  • Add the bangus pieces, eggplant and green finger chili pepper, bring to a boil and simmer for 5 minutes.
  • Add the taramind juice or powdered taramind, fish sauce or salt, and kangkong.
  • Simmer for a minute.
  • Transfer in a serving bowl and serve the Sinigang na Bangus hot with steamed white rice.
