Polynesian Shellfish Kedgeree Recipe

Ingredients:

  • 2 cups cooked shellfish (your choice clams, mussels, scallops or a combination of them) meat
  • 2 cups cooked rice
  • 1 hard-boiled egg, chopped
  • 1 onion, sliced
  • 1 clove garlic, crushed
  • 1 tablespoon soy sauce
  • 2 tablespoons oil
  • Salt and pepper to taste
How to cook Polynesian Shellfish Kedgeree:
  • Heat oil in a saucepan, add onion, garlic and shellfish meat.
  • Lightly fry for one minute, then add cooked rice and chopped hard-boiled egg.
  • Add soy sauce and mix thoroughly until hot.
  • Serve hot with cooked green leaves or salad.

Kedgeree - Kedgeree (or occasionally kitcherie, kitchari or kitchiri) is a dish consisting of flaked fish (usually smoked haddock), boiled rice, eggs and butter. Shellfish Kedgeree is a good dish when there is left-over cooked rice or shellfish meat in the house.
