Polynesian Shellfish Salad with Citrus Juice Recipe
Serves/Makes: 4
Ingredients:
- 3 cups cooked shellfish (your choice clams, mussels, scallops or a combination of them) meat
- 2 tablespoons chopped red pepper
- 1 onion, diced
- 1/2 cup oil
- 1/2 cup vinegar
- Juice of 1 lemon
- Juice of 1 orange
- Parsley, chopped
- Mix all ingredients together in a bowl.
- Leave in bowl for half an hour.
- Drain off excess liquid.
- Serve with chopped lettuce and tomatoes.
