Russian Sturgeon Soup (Solyanka) Recipe

Serves/Makes: 8 servings

Ingredients:

  • 2 pounds sturgeon or salmon fillets, cut into 1-inch cubes
  • 10 pickles
  • 4 onions
  • 4 quarts fish stock or 4 quarts chicken stock
  • 4 tablespoons tomato past
  • 4 tomatoes, sliced
  • 6 tablespoons butter
  • 2 tablespoons capers
  • 2 bay leaf
  • 2 tablespoons olive
  • 2 tablespoons black olive
  • 7 ounces sour cream
  • 2 lemon, sliced
How to cook Russian Sturgeon Soup (Solyanka):
  • Chop onion finely and fry in oil until light golden.
  • Add tomato paste and butter and stew for 5 minutes.
  • Add fish fillets.
  • Pour the broth over the fish.
  • Slice pickles.
  • Add onion, capers, pickles, sliced tomatoes and a bay leaf to the broth.
  • Cook for 10-15 minutes.
  • Before serving, add sour cream, olives, black olive, and lemon slices. Sprinkle with greens.

Solyanka is a thick, spicy and sour soup in Russian and Ukrainian cuisine. There are three basic types of solyanka, with the main ingredient being either meat, fish, or mushrooms.

Sturgeon is a meaty, delicate tasting fish. It can be served baked, fried, smoked, or grilled. It’s flesh is more dense than say, cod, so it won’t flake as one might expect. Keep this in mind when you prepare sturgeon because it may become a bit tough with a more pronounced fish flavor when overcooked.
