Salted Cod Fritters Recipe

Ingredients:

  • 5 pieces salted cod
  • 6 potatoes
  • 1 large onion
  • 2 bay leaves
  • 1 sprig fresh rosemary
  • Water
  • 2 eggs
  • Small bouquet of parsley, finely chopped
  • 1 tablespoon (9 g) flour
  • Salt and pepper, to taste
  • Oil
How to cook Salted Cod Fritters:
  • Soak cod in water overnight, to remove the salt drain.
  • Into a casserole, add cod, potatoes, onion, bay leaves and rosemary cover with water.
  • Bring to a boil simmer until done.
  • Drain bone cod and crush potatoes.
  • Mix together cod, potatoes, eggs, parsley, flour, salt and pepper.
  • In a fryer, preheat oil.
  • Using 2 spoons, shape mixture into small balls fry fish balls into really hot oil.
  • Fry balls for 10 minutes.

Note:

A Portuguese dish that can either be served hot or cold.
