Sauteed Sole Recipe
Serves/Makes: 4
Ingredients:
- 4 sole (or cod) fillets
- White wine vinegar
- Salt
- Flour
- Vegetable oil
- 2 to 3 tablespoons (30 to 45 mL) butter
- 1/3 cup (80 mL) lemon juice
- 1/3 cup (80 mL) freshly finely chopped parsley
- 1/2 lemon, quartered
- Pat dry sole fillets with paper toweling.
- Sprinkle sole fillets with white wine vinegar salt.
- Coat fish fillets with flour.
- Preheat a little vegetable oil
- Brown sole fillets into hot oil.
- Remove sole fillets from fry pan wipe fry pan with paper toweling.
- Into fry pan, mix together butter, lemon juice and parsley.
- Warm over low heat.
- Pour all over sole fillets.
- Serve, along with lemon quarters.
