Sauteed Sole Recipe

Ingredients:

  • 4 sole (or cod) fillets
  • White wine vinegar
  • Salt
  • Flour
  • Vegetable oil
  • 2 to 3 tablespoons (30 to 45 mL) butter
  • 1/3 cup (80 mL) lemon juice
  • 1/3 cup (80 mL) freshly finely chopped parsley
  • 1/2 lemon, quartered
How to cook:
  • Pat dry sole fillets with paper toweling.
  • Sprinkle sole fillets with white wine vinegar salt.
  • Coat fish fillets with flour.
  • Preheat a little vegetable oil
  • Brown sole fillets into hot oil.
  • Remove sole fillets from fry pan wipe fry pan with paper toweling.
  • Into fry pan, mix together butter, lemon juice and parsley.
  • Warm over low heat.
  • Pour all over sole fillets.
  • Serve, along with lemon quarters.
