Sauteed Trouts and White Wine Mayonnaise Recipe

Ingredients:

  • 4 (1/2-pound / 227-g each) trouts, cleaned
  • 3 tablespoons (45 mL) butter
  • 1 tablespoon (15 mL) lemon juice
How to cook:
  • Brown trouts in hot melted butter and lemon juice, over medium heat, for 4 to 6 minutes on each side.
  • Serve, along with white wine mayonnaise.
White Wine Mayonnaise Ingredients:
  • 4 tablespoons (60 mL) white wine
  • 3 egg yolks
  • 1/2 cup (125 mL) oil
White Wine Mayonnaise Preparation:
  • In a casserole, boil white wine until reduced to 2 tablespoons (30 mL).
  • In a blender or a food processor, well mix egg yolks.
  • Meanwhile, while blender or food processor is working, very slowly pour in oil.
  • In the same manner, pour in white wine.
  • Mix well; pour into a sauce-boat.
