Scandinavian Poached Cod Recipe
Serves/Makes: 4
Ingredients:
- 4 to 6 (6-ounce / 170-g each) cod steaks or fillets
- 1 cup (250 mL) hot water
- Juice of 1 lemon
- 1 small onion, thinly sliced
- 1 celery stalk, diced
- 2 garlic cloves, crushed
- 1 bay leaf
- 1/4 teaspoon (1 mL) thyme
- 4 cloves
- 1 teaspoon (5 mL) salt
- 1/4 teaspoon (1 mL) peppercorns
- Mix together all ingredients, except cod, into a glass dish.
- Cover; microwave on 'MAXIMUM' for 6 minutes, to bring mixture to a boil.
- Mix well; arrange cod steaks or fillets side-by-side into dish.
- Cover dish; poach fish on 'MAXIMUM' for 2 minutes.
- Delicately turn fish; cover and poach on 'MAXIMUM' for 1 minute longer.
- Leave to rest for 5 to 8 minutes, before serving.

Preparation time: 10 minutes
Cooking time: 9 minutes
Waiting time: 5 to 8 minutes
Small cod fillets or steaks are easier to poach.
This recipe can also be used to poach small salmon fillets.
Serve with melted butter mixed with a little lemon juice and minced parsley, or with a parsleyed white sauce.
