Sea Scallops for Valentine Recipe
Serves/Makes: 2
Ingredients:
- 1/2 pound (227 g) sea scallops
- Skim milk
- 2 tablespoons (30 mL) flour
- 1 tablespoon (15 mL) olive oil
- 1/2 cup (125 mL) white wine
- 1/2 cup (125 mL) chopped shallots
- 2 tablespoons (30 mL) chopped green onion
- 2 teaspoons (10 mL) freshly chopped parsley
- Lemon juice, to taste
- Pepper, to taste
- Using a cleaver, flatten scallops dip scallops into milk, then roll into flour to coat.
- Saute scallops into hot olive oil for about 2 minutes.
- Transfer scallops into a dish.
- Pour white wine into skillet.
- Sprinkle with chopped shallots, green onion and parsley.
- Simmer for 1 minute or so.
- Pour over scallops.
- Season to taste with lemon juice and pepper.
