Seafood Mix Salad with Rice Recipe

Ingredients:

  • 1/2 cup (125 mL) boiled lobster meat cubes
  • 12 large scallops, sliced into 4 sections
  • 1/2 cup (125 mL) tiny fresh shrimps
  • Smoked salmon strips
  • 3 cups (750 mL) boiled white rice
  • 8 small green onions, finely chopped
  • 1/4 cup (60 mL) freshly chopped mint
  • 3 tablespoons (45 mL) freshly chopped coriander
  • 1 teaspoon (5 mL) fennel seeds
  • 1 celery heart with leaves, finely chopped
  • 1/2 cup (125 mL) fresh cherries, pitted
How to cook Seafood Mix Salad with Rice:
  • Into a large bowl, mix together all salad ingredients (lobster meat cubes, scallop slices, tiny shrimps, salmon strips, boiled rice
  • 3 cups (750 mL) boiled white, green onions, mint, coriander, fennel seeds, celery and cherries.
  • Set aside.
  • Into a clean bowl, mix together all sauce ingredients (mayonnaise, tomato sauce, lemon or lime juice, Tabasco sauce, salt and freshly ground pepper).
  • Add sauce to salad ingredients mix well.
  • Refrigerate for 2 1/2 hours.
  • Serve, cold from the refrigerator.
How to cook Spicy Sauce:
  • 1/2 cup (125 mL) light mayonnaise
  • 1 tablespoon (15 mL) tomato sauce
  • 3 tablespoons (45 mL) lemon or lime juice
  • Tabasco sauce, to taste
  • Salt and freshly ground pepper, to taste

Preparation time: 30 minutes
Refrigeration time: 2 1/2 hours
