Seafood Mix Salad with Rice Recipe
Serves/Makes: 10
Ingredients:
- 1/2 cup (125 mL) boiled lobster meat cubes
- 12 large scallops, sliced into 4 sections
- 1/2 cup (125 mL) tiny fresh shrimps
- Smoked salmon strips
- 3 cups (750 mL) boiled white rice
- 8 small green onions, finely chopped
- 1/4 cup (60 mL) freshly chopped mint
- 3 tablespoons (45 mL) freshly chopped coriander
- 1 teaspoon (5 mL) fennel seeds
- 1 celery heart with leaves, finely chopped
- 1/2 cup (125 mL) fresh cherries, pitted
- Into a large bowl, mix together all salad ingredients (lobster meat cubes, scallop slices, tiny shrimps, salmon strips, boiled rice
- 3 cups (750 mL) boiled white, green onions, mint, coriander, fennel seeds, celery and cherries.
- Set aside.
- Into a clean bowl, mix together all sauce ingredients (mayonnaise, tomato sauce, lemon or lime juice, Tabasco sauce, salt and freshly ground pepper).
- Add sauce to salad ingredients; mix well.
- Refrigerate for 2 1/2 hours.
- Serve, cold from the refrigerator.
- 1/2 cup (125 mL) light mayonnaise
- 1 tablespoon (15 mL) tomato sauce
- 3 tablespoons (45 mL) lemon or lime juice
- Tabasco sauce, to taste
- Salt and freshly ground pepper, to taste
