Seafood Pie (2) Recipe
Serves/Makes: 1 pie
Ingredients:
- Dough
- 4 cups (1 L) flour
- 8 tablespoons (120 mL) baking powder
- 2 teaspoons (10 mL) salt
- 2 tablespoons (30 mL) dry mustard
- 1 1/3 cups (310 mL) shortening
- 1 3/4 cups (440 mL) milk
Filling - 2 cups (500 mL) frozen lobster
- 2 cups (500 mL) scallops
- 2 cups (500 mL) shrimps
- 1 carrot, grated
- 1 cup (250 mL) water
- 2 cups (500 mL) diced potato
- 1 cup (250 mL) chopped celery
- 1 cup (250 mL) finely chopped onion
- 1/4 cup (60 mL) chopped green onion
- 1 small can evaporated milk
- 1/2 cup (125 mL) butter
- 1 teaspoon (5 mL) fish seasoning
- Salt and pepper, to taste
- Basil, to taste
- A little milk
- 4 tablespoons (60 mL) cornstarch
- Prepare dough.
- Prepare filling.
- Pour filling into prepared dish.
- Top with remaining dough; cut slits.
- Bake in a preheated 180°C (350°F) oven until golden.
- Mix together flour, baking powder, salt and dry mustard; cut in shortening, then add milk.
- Well mix.
- Roll enough dough to line an 8 x 15 x 3-inch (20 x 38 x 7.6-cm) dish.
- Roll remaining dough into a rectangle, large enough to cover the dish.
- In a casserole, bring together to a boil carrot, water, potato dices, chopped celery, onion and green onion.
- Boil for 10 minutes.
- Stir in evaporated milk, butter, scallops, lobster meat and shrimps.
- Simmer for a few minutes.
- Season with fish seasoning, salt, pepper and basil.
- Mix together a little milk and cornstarch; stir into filling.
