Shrimp and Eggplant Dumplings Recipe

Serves/Makes: 44 dumplings

Ingredients:

  • 1/2 pound (12 large) shrimp, shelled, deveined, and chopped small (optional)
  • 2 tablespoons sesame oil
  • 1/2 pound Japanese eggplant, peeled and cut into small dice (about 2 cups)
  • Salt
  • 2 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 2 tablespoons dry sherry
  • 2 tablespoons shoyu (soy sauce)
  • 1/2 cup water chestnuts, cut into small dice
  • 1 cup bean sprouts
  • 6 tablespoons pine nuts, toasted
  • 2 teaspoons arrowroot powder
  • 1 (1-pound) package dumpling wrappers, preferably round
  • Lettuce, to line the steamer
  • Dipping sauce (see the recipe below), to serve
How to cook Shrimp and Eggplant Dumplings:
  • Warm the oil in a large skillet. Add the eggplant, a sprinkling of salt, the garlic, and the ginger. Cook over medium heat until the eggplant is softened, about 3 minutes. Add the sherry and shoyu and deglaze, stirring until the liquid is absorbed. Stir in the water chestnuts and bean sprouts and cook just until wilted, about 1 minute. Remove from the heat and transfer to a bowl. Stir in the pine nuts, shrimp if using, and arrowroot.
  • Line a baking sheet with parchment. Have handy a small bowl of water, a pastry brush, and a fork.
  • Place a wrapper in front of you and brush around the edges with water. Place a heaping teaspoon of filling in the middle of the wrapper. Fold the sides of the wrapper together pressing a 1/2-inch lip around the filling. Press the edges again to make sure the wonton is tightly closed. Place on the prepared baking sheet. Repeat until all the filling is used up.
  • To cook, steam the wontons over the lettuce-lined steamer for 6 minutes, until translucent around the edges.
  • Serve the Shrimp and Eggplant Dumplings hot, with the dipping sauce.

Dumpling Dipping Sauce Recipe

Dumpling Dipping Sauce Ingredients:
  • 2 teaspoons minced ginger
  • 2 minced garlic cloves
  • 2 teaspoons brown rice vinegar
  • 2 tablespoons dry sherry
  • 2 tablespoons shoyu (soy sauce)
  • 1/2 cup water
How to cook Dumpling Dipping Sauce:
    Combine all sauce ingredients in a small bowl and mix well.
